cinnamon apple roasted asparagus


this is a holiday favorite in our house, but is just as good any time of year! (it was also, funnily enough, an accident. the first time my wife made it, she thought she'd grabbed the cumin.) hugs! reed

ingredients:
  • 1 lb asparagus, rinsed and trimmed
  • 1 lemon, juiced 
  • 1-2 apples, peeled and julienned 
  • 3 tbsp cinnamon
  • 1 tsp ginger
  • 2 tsp nutmeg
  • salt + freshly ground pepper to taste
  • 1 tsp olive or canola oil
 
instructions:
  1. preheat oven to 400F
  2. toss asparagus and apples with lemon juice, spices, and oil until coated
  3. bake for 20-25 minutes or until tender (personally, I cook them until they are blackened and crunchy! but this is totally up to you & your preference)
  4. enjoy!
